Philadelphia Cherry Cheesecake Recipe

  • 4 packages (8 oz each) Philadelphia cream cheese, softened
  • 1 cup sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup sour cream

For the Topping:

  • 1 can (21 oz) cherry pie filling

Instructions

  1. In a large mixing bowl, beat cream cheese until smooth. Add sugar and mix well.
  2. Add eggs one at a time, mixing after each. Stir in vanilla extract, lemon juice, and sour cream until well blended.
  3. Pour the batter over the cooled crust and smooth the top.
  4. Bake for 55-60 minutes, or until the edges are set but the center is slightly jiggly.
  5. Turn off the oven and let the cheesecake cool inside for 1 hour with the door slightly open.
  6. Refrigerate for at least 4 hours or overnight to set completely.
