Sweet Peppers with Goat Cheese and Balsamic Vinegar

These sweet peppers with goat cheese and balsamic vinegar are the perfect mix of creamy, sweet, and tangy flavors. Easy to prepare, they make a delicious appetizer, snack, or side dish. Baked until soft and finished with a drizzle of balsamic, this recipe is simple yet elegant.

  • Total Time: 25 minutes
  • Yield: 6 servings

Ingredients

  • Mini Sweet Peppers (12 pcs) – Small, colorful, and naturally sweet
  • Goat Cheese (4 oz) – Creamy and tangy, perfect for stuffing
  • Balsamic Vinegar (2 tbsp) – Adds a deep, slightly sweet acidity
  • Olive Oil (1 tbsp) – Helps the peppers roast evenly
  • Garlic (1 clove, minced) – Enhances flavor with a warm, savory note
  • Salt & Pepper (to taste) – Brings out the natural flavors
  • Optional Add-Ons: Honey, nuts (like pistachios or walnuts), fresh basil

Instructions

ONE – Preheat the Oven: Set to 375°F (190°C) to ensure even cooking.

TWO – Prepare the Peppers: Wash, dry, and cut them in half lengthwise. Remove the seeds.

THREE – Mix the Filling: In a bowl, combine goat cheese, minced garlic, salt, and pepper. Mix until smooth.

FOUR – Stuff the Peppers: Fill each pepper with the goat cheese mixture, leaving a little space to prevent overflow.

FIVE – Bake Until Golden: Arrange the peppers on a baking sheet, drizzle with olive oil, and bake for 15-20 minutes.

SIX – Add the Balsamic: Remove from the oven and drizzle with balsamic vinegar before serving.

Notes

  • For extra crispiness, air fry at 375°F for 8-10 minutes.
  • Serve warm or cold—both are delicious!
  • Try adding a drizzle of honey for a sweet contrast.
  • Can be made ahead and stored in the fridge for up to 3 days.
