Ingredients
- Mini Sweet Peppers (12 pcs) – Small, colorful, and naturally sweet
- Goat Cheese (4 oz) – Creamy and tangy, perfect for stuffing
- Balsamic Vinegar (2 tbsp) – Adds a deep, slightly sweet acidity
- Olive Oil (1 tbsp) – Helps the peppers roast evenly
- Garlic (1 clove, minced) – Enhances flavor with a warm, savory note
- Salt & Pepper (to taste) – Brings out the natural flavors
- Optional Add-Ons: Honey, nuts (like pistachios or walnuts), fresh basil
Instructions
ONE – Preheat the Oven: Set to 375°F (190°C) to ensure even cooking.
TWO – Prepare the Peppers: Wash, dry, and cut them in half lengthwise. Remove the seeds.
THREE – Mix the Filling: In a bowl, combine goat cheese, minced garlic, salt, and pepper. Mix until smooth.
FOUR – Stuff the Peppers: Fill each pepper with the goat cheese mixture, leaving a little space to prevent overflow.
FIVE – Bake Until Golden: Arrange the peppers on a baking sheet, drizzle with olive oil, and bake for 15-20 minutes.
SIX – Add the Balsamic: Remove from the oven and drizzle with balsamic vinegar before serving.
Notes
- For extra crispiness, air fry at 375°F for 8-10 minutes.
- Serve warm or cold—both are delicious!
- Try adding a drizzle of honey for a sweet contrast.
- Can be made ahead and stored in the fridge for up to 3 days.
